Kommuna Kitchen’s top chef and finalist MasterChef Professionals 2 showed you how to make pancakes with Cream of Trout.
To balance out the mayonnaise salad fest during the winter holidays, it’s sometimes worth indulging in gourmet dishes. And since not all restaurants will open on holidays, and to get there you have to put on New Year’s pajamas, we suggest you cook a hearty breakfast at home.
Chef Alexandre Zvigon shared a recipe for Belgian waffles with cream of trout, cream cheese, mustard and sun-dried tomatoes with pistachios and cilantro.
Belgian waffle recipe
For the test:
- Wheat flour – 75 g
- Chicken eggs – 1 pc.
- Butter – 20 g
- Milk – 30 g
- hard cheese (optional) – 50 g
- Pumpkin – 50 g
- starch – 10 g
- salt – pinch
- Trout fillet without skin – 200 gm
- Cream cheese – 75 g
- sun dried tomatoes – 30 g
- Mustard Beans – 15 gm
- Salt – 2 g
- Pepper – 2 gm
- Vegetable oil – 25 g
Rub the pumpkin and cheese in a bowl on a fine grater, add a chicken egg, mix. Next, we mix the milk with butter and heat it on the stove, pour it into the pumpkin and cheese, mix the flour and starch. Knead the dough and salt. The dough should not be too thick.
Transferred to a waffle iron. If you do not have a waffle iron, you can fry it in a frying pan.
The trout is cut into pieces, fried in vegetable oil and left to cool. In cooled salmon, add cream cheese, finely chopped sun-dried tomatoes, and grain mustard, and season with salt and pepper.
Put the fish cream on the waffle and garnish with coriander and chopped pistachios.
