Summer has come. Ukrainian restaurateur-chef Yevgeny Klopotenko advises to dilute the summer days with good military news and try ice cream with salted caramel.
“This is my favorite flavor, because when sugar and salt are combined in one dish, you get a real miracle,” says the cook.
- 420 ml of milk
- 160 g sugar (for caramel)
- 40 g sugar (for ice cream)
- 2 pieces. Eggs
- 120 ml cream (30-33%)
- 2-3 pinch of salt
First, pour 420 ml of milk into a saucepan and bring the mixture to a boil. By the way, you can take milk of any fat. After that, put the boiled milk aside.
Melt 160 g of sugar (until golden) in a deep saucepan. Add salt and milk to the hot sugar. We mix all this well so that our caramel is completely dissolved.
Then remove from the heat and cool to 60 degrees.
Then, in another pot, beat two eggs with 40 g of sugar. Add warm milk to the egg mass with caramel և put on a small fire. We bring it to 82 degrees. At the same time, we constantly touch the bottom of the pan with a spatula.
Leave the mass to cool at room temperature և add 120 ml of cream. All this is well mixed.
Later you have two options.
- If you have a special ice cream maker, add the frozen mixture and follow the instructions.
- If not, carefully pour the mixture into an airtight plastic container and put it in the freezer. Half an hour later we take out the container, mix the mixture with a spoon and put it in the refrigerator again. Repeat this procedure three times (or more). This is done so that there are no crystals in the ice cream. After the last mixing, leave the ice cream in the freezer until it is completely frozen (about 6-8 hours).
