• Flour – 100 gm
• Sugar – 100 gm

• Butter – 100 gm
For guacamole:
• Avocado – 1/2 piece.

• Finely chopped hot pepper – 1 gm
• Coriander, finely chopped – 2 g
• Extra virgin olive oil
• Lemonade
To make the hollandaise sauce:
• Yolk – 2 pcs.
• some water
• salt – pinch
• Lemon juice
• butter – 30 g
cooking:

– Beat eggs with a whisk with sugar and salt, then slowly add the melted butter and stir well. Add the sifted flour and beat until smooth.
We bake the waffles in a waffle iron.
Cook guacamole.
Mix all ingredients well.
– Put the finished waffle on a plate, add 10 g of baby spinach, 50 g of guacamole, 50 g of thinly sliced mortadella.
Cook hollandaise sauce.
– Beat the yolks and water in a steam bath until a thick cream, add salt and lemon juice to taste and butter. We mix everything thoroughly.
