Ingredients: cod fillet – 300 gr., Tempura flour – 200 gr., calendula oil – 900 ml. For the sauce: mayonnaise – 120 gr., Sweet Chili sauce – 40 gr., Freshly fried seaweed – 2 gr. For serving: lemon ½ pieces, salt to taste.
Heat the vegetable oil well in the pot. Cut the fish into thin sticks, dry with a paper towel.
Pour the tempura flour in a bowl and add water little by little. Knead a thick dough with a whisk, it should have a density of 3% kefir.
Dip pieces of fish in dough, roll, put in oil. Dip one foot into warm paraffin 3 times, pausing between layers to allow them to dry. Cook until golden brown, about a minute.
Strain on paper towels, serve with sauce and lemon.
