In the spring you want to get away from complicated side dishes, give preference to light and refreshing soups, salads, snacks. Today we offer to prepare a spring dinner for the whole family with mashed potatoes with zucchini and chicken according to Shuba’s recipe.

Ingredients
- Chicken fillet 200 g
- Water 500 ml
- 1 piece of zucchini.
- Onion 1 piece.
- Garlic, 1 clove.
- 1 bay leaf.
- Olive oil 20 ml
- Salt to taste
- Ground pepper to taste
- Greens to taste
Cooking:
Wash the chicken fillet, put it in a big pot, cover with water, bring to a boil. Peel an onion, cut it in half, put half on the chicken, add salt and cook under the lid on a low heat for 40 minutes.
Peel a squash, grate it and chop it in half. Wash the zucchini, peel it and cut it into cubes. Heat the pan with vegetable oil և fry the garlic and onion, then add the zucchini cubes. Fry for 5 minutes, stirring.
Remove the fillet from the broth, put it aside in a plate. Put the vegetables, the owner of the laurel in a frying pan and cook for 10 minutes. Wash the greens, cut them into small pieces and put them in the soup.
Remove the bay leaf and puree the soup with a blender, bring it to the boiling point, season with salt and pepper to taste.
