Spring zucchini salad recipe from Yevgeny Klopotenko

Salad is a great accompaniment to grilled meat or fish dishes.

Ukrainian chef Yevgeny Klopotenko never ceases to amaze with delicious recipes. This time the chef offers to make a light spring salad with zucchini. According to Klopotenko, crispy zucchini, which is combined with radish, dill, pine nuts, fragrant olive oil, a salad covered with lemon juice, is a delicious and fresh solution. The salad goes well with meat or fish dishes.

To prepare the salad we need:

  • 200 g of zucchini
  • 200 g of radish
  • bunch of dill
  • 20 g of pine nuts
  • juice of one lemon
  • 2 ch.c. l. olive oil
  • salt and pepper to taste

Step by step recipe.

  • Prepare a salad of vegetables. The cook advises to take young zucchini without seeds, with soft skin, which does not need to be cleaned. The radishes should be sweet and thick, so taste them before adding to the salad.
  • Take 200 g of radish, wash it and cut it into circles.
  • Wash the zucchini, cut into circles or strips.
  • Place the vegetables in a small bowl.
  • Wash the bunch of dill, dry it with paper towels, cut it և add it to the vegetables.
  • Grind the salad to taste, add the juice of one lemon և 20 g of pine nuts.
  • Drip salad 2 tbsp. l. olive oil. Mix well, put in the refrigerator for 20 minutes so that the vegetables are juicy, marinate in lemon juice.

  • To taste, you can add cucumber, basil, a little garlic, baby spinach leaves to the salad.
  • Instead of olive oil you can add cedar, corn, flaxseed or pumpkin.
  • The longer the vegetables stay in the sauce, the tastier the salad becomes. You can divide the prepared dish into several portions, and leave one for the next day. It will be delicious and juicy.
